Cogito Coffee is an independent specialty coffee roastery based in Zagreb. According to its official About page, the team opened its first coffee shop, Cafe u Dvorištu, in downtown Zagreb in 2011, and opened the Cogito Coffee Roastery next to it in 2014.

The official website states that the roastery's focus is on sourcing green coffee and roasting it to its fullest potential, with an affinity for “seasonal, transparently sourced, and terroir-driven coffees,” and that the coffee has been “transparently sourced and paid for fairly.”

The same page describes a sister project, Salo, a bakery and bistro focused on sourcing local organic food from small farmers, and states that the business runs its own farm practising regenerative farming.
